When I went to Kerala I tried Kerala’s famous desi daaru (Toddy). I watched localities risk their lives, climbing palm trees barefoot with nothing but raw body strength in just 5 minutes. With precision, they locate and carefully tap the right fruit, delicately cutting and covering it to extract its precious juice.
A container placed above collects the liquid, with this process repeated three times daily. Now, the fresh sap rests in Kerala’s warm climate, slowly fermenting into toddy – a drink with an incredibly sweet taste.
